Carrots -  The beta-carotene is this tasty vegetable is a disease fighting powerhouse.  it protects cell membranes from toxin damage.  Carrots also have vitamins and phytochemicals that protect against cancer of the mouth, esophagus and stomach.
 
There are studies that show carrots protect against cervical cancer  due to the fact that the antioxidents fight HPV (human papilonma virus).
Leace the carrots whole while steaming them - this helps protect against the leeching of healthy nutrients.
 
Spinach -  Spinach may be one of the most powerful vegetables to eat.  Spinach contains lutein, zeaxanthin, carotenoids.  These antioxidents remove unstable molecules from your body .  Other dark green leafy vegetables contain these ingredients too.
 
Folate and fiber in these vegetables help your body produce new cells and repair DNA.  Enjoy raw or steamed.  Their are so many mixes of ready made salads to choose from that you need not without healthy greens.  Some of these greens are easy to grow in a garden, even an indoor one.  Kale, collard greens and spinach taste great as early new greens.  Get the children involved and there will be a green vegetable in your house year round.
