Does anyone want to know information about butternut squash? This squash is a member of the cucurbitaceae family, this includes gourds and melons, and most likely came from Mexico. The butternut squash was prized by Americans Indians - the seeds were thought to increase fertility. Also known as a winter squash it made to the general food market in 1944. The pear-shaped vegetable has a very pleasing sweet nutty taste. The Australians called it "butternut pumpkin" since it can be used as a substitute for pumpkin.
Butternut squash has many health benefits. It contains a rich sourc of vitamin A. One cup of the vegetable has 457% of the daily vitamin requirement. It is also a great source of fiber, potassium and magnesium. It is very filling and contains no fat, cholesterol or sodium.
