This disease is one of the most underrated diseases in this country and maybe the world.
It is characterized by the loss of villi from the small intestines. There is scarring of the supporting tissue which reduces the surface absorption by 70%.
Celiac disease is caused by a wheat gluten sensitivity, but cow's milk, albumen and soy
protein can exhibit the same effect. It can go undiagnosed for years. The result is poor
assimilation of nutrients which helps in tissue repair of the body and maintenance of the
immune system. Undiagnosed it can be the cause of cancer, diabetes, muscular
dystrophy and cystic fibrosis.The intestines become so injured that the body does not
absorb nutrients like chromium and selenium.
Bananas are wonderful to eat and helps to correct the damaged intestinal functions.
Increase intake of selenium and grate apples for healing purposes.
A friend of mine has Celiac disease and her hands were almost crippled. With a
proper diet and very careful eating, she is fine. Now a days there are more choices
of foods that say "gluten free" to buy and they can now be found in the supermarket.
